What happens if I miss a prayer - does my plant die?

No. A neglected plant becomes dormant, not deleted. Its growth pauses, and it recovers as soon as you resume praying.

How many different plants are there to collect?

Do I have to pay to unlock rarer plants?

No - rarer plants and chests unlock purely by levelling up through XP earned from praying.
